What You’ll Learn in This Course

  • Students will understand how altitude affects the acidity, sweetness, and density of coffee beans.

  • Learners will differentiate between coffee varieties and cultivars, including their impacts on flavor.

  • The course covers key processing methods like fermentation and maceration, emphasizing their influence on flavor incuding current experimental practices.

  • Students will learn about both solvent and non-solvent based decaffeination methods and their effects on coffee flavor and extraction.

  • The course teaches how various packaging methods affect the degassing rate and freshness of coffee.

  • This includes producing multiple espresso and milk beverages efficiently under the standards of the Specialty Coffee Association (SCA).

  • Students will learn to adjust temperature and pressure to affect the extraction and flow rate of espresso.

  • The course covers how to choose the right dose, yield, and shot contact time to optimize flavor.

  • Learners will be taught how to construct blends pre and post-roast to achieve desired flavor profiles.

  • This includes understanding the roles of different proteins and fats in milk, how they affect foam quality, and how to handle milk for optimal steaming and latte art.

  • Students will learn to measure water properties like total dissolved solids (TDS), alkalinity, and hardness, understanding their impact on coffee brewing and machine maintenance.

  • The course teaches advanced sensory evaluation techniques, including triangulation and flavor balance, to refine coffee offerings.

  • Techniques for minimizing coffee waste during grinding, dosing, and tamping will be covered.

  • This includes the biochemical properties of milk and how they affect foam stability and taste in coffee drinks.

  • Learners will gain skills in beverage menu design, focusing on how to develop and optimize recipes for consistency and customer satisfaction.

  • The course covers the adjustment of grind settings based on bean type and desired extraction, with a focus on particle size distribution.

  • Students will be equipped with knowledge on the impact of machine settings like boiler temperature and pressure profiles on espresso quality.

  • Key business skills such as calculating cost of goods sold, contribution margin, and break-even analysis will be discussed.

  • This includes routine cleaning, maintenance, and troubleshooting techniques to ensure equipment operates efficiently and produces consistent results.

  • Understanding different water filtration systems and their roles in maintaining water quality that meets SCA standards and protects machinery from scale and other issues.

 

Get Globally Recognized Barista Certification

At the end of this course, you’ll take a written exam based on what you will learn during the course. When you pass that exam, you’ll get a certificate from the most widely recognized certification authority, the Specialty Coffee Association.

About Your Trainer

When learning important coffee skills, you want to learn from someone with extensive experience and an understanding of research-based coffee theory.

This is where I come in!

My name is Trent Rollings, I’ve been in the specialty coffee industry for 10 years, with experience as a barista, cafe owner, and coffee bar designer. I’m also a World Coffee Championships Representative and Judge. I use this experience as well as my personal coffee skills, honed over many years to help you learn coffee preparation during this course.
